blueberry overnight oats
This is my go-to when I want breakfast or a lunchbox snack that actually supports the gut instead of messing with it. Oats, seeds, kefir and blueberries blended into something that’s creamy, filling, and easy on digestion. Sweet enough to pass the picky test, but not so sweet it backfires an hour later. IYKYK.
- 1 cup oats
- 1½ tbsp chia seeds
- 1½ tbsp ground flaxseed
- ½ tsp turmeric
- 1¼–1½ cups kefir (adjust for thickness)
- 1 tbsp extra-virgin olive oil
- 1–2 tbsp maple syrup (to taste - sweet but not “spiky”)
- ½–¾ cup blueberries
- Optional: 1–2 tbsp nut or seed butter (for extra fullness)
Mix all dry ingredients first: oats, chia, flax, curcuma.
Add kefir, olive oil, maple syrup, and stir well. It should look slightly more liquid than you want at this stage, chia and flax will thicken by morning.
Swirl in nut/seed butter if using.
Fold in blueberries.
Rest at least 4 hours or overnight in the fridge.
Stir before serving. Add a splash of kefir or milk if needed.

Store in an airtight container.
