chocolate hazelnut bliss cubes
Chocolatey, fudgy little cubes made from dates, hazelnut butter, oats, cocoa and seeds. They taste firmly in N*tella territory, while bringing fibre, healthy fats, magnesium and a little protein along for the ride. Make a batch, keep them in the freezer and pull out a cube whenever the lunchbox, snack plate or 3pm hangries need something that feels like a treat but works a little harder.
Makes approximately 40 small cubes.
- 16 soft Medjool dates, pitted
- ⅓ cup smooth hazelnut butter
- ½ cup rolled oats
- ¼ cup unsweetened cocoa powder
- 1 tbsp chia seeds or ground flaxseed
- 1 tbsp hemp seeds
- Pinch of salt
- Extra cocoa powder, for dusting
Add the dates, hazelnut butter, oats, cocoa powder, chia or flaxseed, hemp seeds and salt to a food processor.
Blend until everything is finely chopped and the mixture starts to clump together. It should hold firmly when pressed between your fingers.
If the mixture feels too dry or crumbly, add water or milk 1 teaspoon at a time and blend again.
Scoop out small portions of the mixture and roll them briefly between your hands to compact them.
Use your fingers to gently press and shape each piece into a little cube. They don’t need to be perfectly even.
Lightly dust the cubes with cocoa powder.
Chill until firm.

Store in an airtight container in the fridge and serve chilled or allow to soften slightly before eating.
Freeze the cubes in an airtight container, with baking paper between layers if needed.
