These golden carrot and Parmesan fritters are soft in the middle, crisp around the edges and built to do a lot more than the average veggie fritter. Eggs, Parmesan, chickpea flour and hemp seeds bring plenty of protein, while wholegrain spelt adds complex carbs and grated carrot brings colour. They hold up well cold, freeze brilliantly and are easy to grab when the lunchbox needs something substantial without another sandwich.

01 Ingredients

Makes 10–12 small fritters.

  • 2 cups finely grated carrot
  • 2 eggs
  • 1 cup finely grated Parmesan
  • ¼ cup chickpea flour
  • ¼ cup wholegrain spelt flour
  • 2 tbsp hemp seeds
  • 1 tsp baking powder
  • ¼ tsp salt
  • Black pepper, optional
  • Olive oil, for frying
02 Method
1.

Add the grated carrot, eggs, Parmesan, chickpea flour, wholegrain spelt flour, hemp seeds, baking powder, salt and optional black pepper to a large bowl.

2.

Stir until everything is evenly combined.

3.

Leave the mixture to rest for 5 minutes. It should be thick and scoopable, and hold together when pressed.

4.

Heat a thin layer of olive oil in a frying pan over medium heat.

5.

Add heaped tablespoons of the mixture to the pan and flatten them gently into small fritters.

6.

Cook for 3–4 minutes per side, until deeply golden and cooked through in the centre.

7.

Transfer to a wire rack and cool completely before storing, freezing or packing.

Cool completely, then store in an airtight container in the fridge.

Freeze completely cooled fritters with baking paper between them, then transfer to a freezer bag or airtight container once frozen.

Packing chilled or frozen

Pack them chilled or straight from frozen in an insulated lunchbox with an ice pack. Frozen fritters can thaw gradually by lunchtime.
