
Ingredients
(Makes ~40–60 small gummies, depending on mould size)
For the strong tea
6 cups water
12–15 chamomile tea bags (or ±¾ cup dried chamomile flowers)
For the gummies
2 cups warm concentrated chamomile tea
6 tbsp gelatin
3–4 tbsp raw honey (to taste)
4 tbsp fresh lemon or orange juice
Method
Bring water to a boil. Add chamomile, reduce heat to low and cover.
Gently simmer for 20 minutes, then turn heat off and steep 10 minutes more.
Strain well, pressing the tea bags/flowers firmly.
(You should have about ±5½ cups tea.)Return tea to the pan and simmer uncovered on low until reduced to about 2 cups (±20–30 minutes).
This step boosts flavour without needing extra gelatin.Pour 2 cups warm concentrated tea into a pan.
Sprinkle gelatin evenly over the surface and let bloom for 5 minutes.
Warm on very low, whisking gently until fully dissolved.
⚠️ Do not boil.On low heat, stir in honey and citrus juice.
Taste while warm and adjust:
- Too bitter → add a touch more honey
- Too flat → add a splash more citrusRemove from heat and let rest 1 minute.
Skim off any foam.
Pour into silicone moulds or a small glass dish.
Refrigerate 1–2 hours until fully set, then unmould.
